Did you know Amy and I have celiac? We've eaten GF for 10 years now! Did you start just for the health benefits or allergies?
ReplyDeleteAmber, I had no idea anyone was reading this! I've just been rambling! So funny! Ya, I started for health benefits. I've had symptoms for about 12 years, and last year a friend asked me if I had trouble on the Sundays that I fast. I realized that I didn't. That was the first time that I even considered that my symptoms might be from food. I was diagnosed with IBS 12 years ago, and I thought that was what it was and that I had no control over it. I went off wheat the very next day and my symptoms disappeared. I ate gluten free for about a month before I decided I better go to the doctor to find out what was wrong with me. She said it was too late to test for Celiac, that I would have to eat the equivalent of 3 pieces of bread a day for 3 months to get an accurate result. She just told me to go see the allergist, and to stay away from wheat. I did go to the allergist, and she tested me for a wheat allergy, which I don't have, and then said the same thing. I wish I had a diagnosis, but I can control all my symptoms (bloating, stomach pain, constipation or the opposite, and some other things I can't describe here) by what I eat. I feel so much better now. Anyway, that's my story.
ReplyDeleteI can't believe you and Amy have been eating gluten free for that long! You probably have some great tips! I want to hear your story. I should just call you! DO others in your family have it? When did you start having symptoms?
